Tomorrow is Easter so even though it’s just the two of us we were still planning to have ham and mashed potatoes. I’m not sure what pork butt has to do with rebirth but so it goes.
The ham was sold out, so got a small pork shoulder instead. Still looking forward to it. Nothing smells quite like a roast cooking slowly. 325 for first hour then just 225 all day. Looking forward to making cranberry relish with an orange (considering blood orange) and a bag or cranberries blitzed in the food processor. Also some collard greens with sweet sausage.
Going to be a ton of food for just us but so it goes. At least it will make excellent leftovers.
