I don’t really need pictures. You have all seen pork shoulder, greens (if not necessarily broccoli rabe) and potatoes before.
It was awfully nice to cook a big dinner for Easter even though it was just the two of us. We might have invited people over except we weren’t really in a cleaning the house mood.
Nice to have the whole house smelling like pork shoulder all day, although it’s weird to start it at 5:30 so I can put it in before work.
I saw some broccoli rabe at Shop-Rite yesterday and cooked it for the first time. Actually very easy, just boil for a minute, put in an ice bath than do a quick sautee with olive oil and garlic. It cooks wicked fast.
And an old family standby that is literally on the Lipton Onion Soup mix box. Potatoes (I add sweet potatoes and an onion) with a onion soup mix packet and some olive oil shaken in a bag then cooked at 425 for 40 minutes or so.
Delicious. Although I might try to make like pulled pork with the pork shoulder the next time.
I really loved the broccoli rabe so definitely doing that again.
And fabulous leftovers.
